My favourite butterfly pea hot drink has to be a blue chai latte, or ‘Sky Chai’. Butterfly pea grows well in India, where it is called aparajita. Sky Chai is easy to make – just put all the ingredients into a glass or shaker the day before and pop into the fridge to infuse overnight. It’s the perfect mix of spice, butterfly pea goodness, honey, and velvety soy milk!
