Cranberry & Butterfly pea edible rubies

  • cranberry drink
  • strong cup of Thé Paon butterfly pea tea
  • 2g agar powder

Method

The final volume of the butterfly pea mix is 275mL. The deepness of the red can be controlled by changing the ratio of tea to cranberry drink. We started with 225mL cranberry drink and 50mL butterfly pea tea (225mL + 50mL = 275mL total).

Place your cranberry mix into a pot and add 2g agar powder. Whisk every now and then while bringing the liquid to a boil. Once it has reached boiling point pour into a heat-resistant measuring cup and correct the volume back to 275mL (some of the liquid will have evaporated). The final concentration of the agar is 0.73% (w/v).

Pour your tea mix into a plastic container, then place into the fridge. Leave to set for around 20 minutes.

Scoop out a portion of your butterfly pea cranberry jelly, and gently tear into jewels.

Tip: your edible jewels look best in glassware or bright white plates – anything with enough light to make them shine.
