Gin and tonic & Butterfly pea edible gems

Ingredient

  • 150mL Thé Paon butterfly pea tea
  • 330mL tonic water
  • 4.4g agar powder
  • 70mL gin

Method

Bring the butterfly pea tea and tonic water to a gentle boil and reduce the volume by a third (final volume ~300-330mL). To boiling liquid add the agar and whisk to dissolve.

Once the agar is dissolved take off the heat and let the mixture cool a little bit. Quickly top up the mixture to 330mL with tonic water. Add the gin and stir gently to prevent bubbles forming. The final concentration of the agar is 1.1% (w/v).

Pour your butterfly pea mix into a plastic container, then place into the fridge. Leave to set for around 20 minutes.

Tear into jewels and enjoy! For a more intense colour add a squeeze of lemon.

Tip: for an alcohol-free version add the gin to the tonic and tea mixture before boiling. The alcohol will burn off while the liquid is reducing.
