Ingredients

  • 30mL Thé Paon Pure butterfly pea-infused gin
  • 15mL lemon juice
  • 15mL sugar syrup
  • 10mL campari
  • 1/2 an egg white or aquafaba
  • Ice cubes
  • Garnishes : butterfly pea petals (remove the green sepal) or sherbet

Method

To make the gin infusion, put 1 dessertspoonful of our Pure butterfly pea into 100mL gin, and leave overnight in the fridge. Strain and it’s ready to use.

Fill a cocktail shaker 3/4 with ice, and add the infused gin, lemon juice, sugar syrup, and campari. Lastly add the egg white or aquafaba.

Add the shaker lid and shake vigorously for 30 seconds. Double strain into a martini glass and let it sit for a bit so that the velvety foam forms on the top.

Garnish with the butterfly pea petals or other edible flower, or sherbet.
